Even though a curing zombie villager is technically a hostile mob, the player has invested resources into turning it into a useful mob, so it shouldn't be possible for them to de-spawn. This issue can of course be prevented by the player staying within 32 blocks of the zombie until it's cured, but that could be a waste of precious time. I.e. on Easy, villagers will never die from any form of attack but only be knocked unconcious for a while, whereas on Hard they will be killed 100% of the time if not converted by a zombie. Edit: This will not make villagers invincible except against zombies (unless extended over other mobs aswell) they are still able to die from falldamage

Make em breed maybe the childern wont despawn. If you have your world set to hard difficulty, villagers cannot be killed by zombies only infected, whereas on easy mode they WILL die. (50% for normal) Java btw. If you can, give them a name, a less reliable but easier way, is just throw blocks at them until they pick one up. They dont even despawn.
On bedrock, you just need to cure one zombie villager and everyone within 16 blocks in each direction will drop prices. I have a villager trapped in the middle of my trading hall on a piston. When I want cheap prices, I drop him down to a waiting zombie, then fire him back up to heal him. It looks like a roman colosseum.
In the legacy console edition, zombie villagers no longer spawn from spawners because they have their own spawn egg. The villagers all had beds and doors and such to keep them safe. They even had iron golems and cats that spawned in on their own.
