To get a good joint and not have any water squirting out while I am working on this, I need to make sure there is no water in the pipes. Here is my plan of attack and wondering if this is safe and sound. Turn off gas supply. Turn off cold water supply. Run hot water in a faucet or tub. Fix the solder joint. Open cold water supply.

Upvote. Usually the leakage at the fittings is not a problem since you are still carrying 99% of the water away. If you want to seal up the joints you can pull the fittings apart and smear the joint area with a tar based roof patch. After several weeks you might not be able to get the joints apart without ruining the pipe.

You should only use about 1/2" to 3/4" of solder to make a joint on that size; don't add more or you could just fill the pipe.
